Traditional Greek Moussaka (Vegetarian - Monastic Style)

Ingredients
Part A (Base & Tomato Filling)
1.5 kg potatoes
7 medium eggplants (aubergines)
5 medium onions
4 cloves of garlic
1.5 kg fresh tomatoes
250 g breadcrumbs
250 g grated Kefalotyri cheese (or Pecorino Romano/Parmesan alternative)
Ground cinnamon, ground cumin, black pepper, vegetable oil (for frying), salt
Part B (For the Béchamel Sauce)
250 g all-purpose flour
200 g vegetable oil (or olive oil)
5 eggs
2 glasses of milk
1.5 tsp grated nutmeg
Instructions
Step 1: Preparing and Frying the Vegetables
Peel, wash thoroughly, and slice the potatoes and eggplants into rounds. Salt the eggplant slices generously and place them in a colander for at least one hour to release their bitter juices. Rinse them, pat dry, and fry them in hot oil, potatoes first, followed by the eggplants. Drain well on paper towels.
Step 2: Preparing the Tomato Sauce
Peel and finely chop the onions and garlic. Sauté them in a large pan until translucent and golden. Puree the fresh tomatoes in a blender and add them to the pan. Simmer the sauce for 15 minutes, then stir in the spices (cinnamon, cumin, black pepper, and salt) and remove from heat.
Step 3: Layering the Pan
In a baking dish, arrange a single layer of fried potatoes. Use a deep ladle to spread a portion of the tomato sauce over them. Sprinkle with a handful of breadcrumbs and grated cheese. Next, create a layer of fried eggplants.
Repeat the process in sequence (potatoes, tomato sauce, breadcrumbs, cheese, eggplants, sauce, etc.). Aim for two full layers of potatoes, two layers of eggplants, and four alternating layers of sauce and cheese-breadcrumb mixture.
Step 4: Making the Béchamel Sauce
Heat the oil in a saucepan over low heat. Gradually whisk in the flour, stirring constantly with a wooden spoon until it toasts slightly and turns lightly golden.
Slowly pour in the milk and the pre-beaten eggs, whisking vigorously without stopping to prevent lumps. Continue cooking until the mixture thickens into a smooth cream. Remove from heat and stir in the grated nutmeg.
Step 5: Baking
Pour the prepared béchamel cream evenly over the layered vegetables, completely covering the top of the dish. Bake in a preheated oven at 180°C (350°F) for about half an hour, or until the top turns a beautiful golden-brown color.
Useful Tip: Once out of the oven, let the moussaka rest and cool down for a while. If you try to cut it while it is piping hot, the pieces will fall apart. Alternatively, if you prefer, you can use the breadcrumbs and grated cheese strictly between the layers, and spread the béchamel exclusively on top.
